As you can see, we’re out of paper towels. #reallife
On that note (of real life), I struggled to figure out dinner this week. I drank two Diet Cokes yesterday at lunch, and I rarely touch soda of any kind anymore. This is, without question, an overshare, but as a result, I had digestive difficulties and a stomachache and just generally didn’t feel great after my soda consumption. Laying on the couch watching three episodes straight of Dallas Cowboys Cheerleaders: Making the Team Season 9 (guilty pleasure) was far more comfortable than planning dinners for the week. Somehow I muscled through, but these plans could change since it wasn’t my most thoughtful effort, and I’m trying to coordinate my cooking with recipes I’m planning to share soon here. Planning dinners for the week + figuring out a new photography setup + recipe development and photography + wedding to attend 6 hours away next weekend = me not thinking clearly. The moral of the story is, everything is not always perfect in the food department in the Natural Comfort Kitchen, and I think it’s important to convey that so you don’t think you need to be a perfect, Pinterest-y cook to read or utilize the recipes I share, or to get a homemade dinner on the table. Sometimes, you think it up 40 minutes before dinner, run to the store, and food miraculously does get to the table. My favorite food blogs are the ones that occasionally offer a glimpse into their real, not perfectly organized, life, too. Some that I’ve been enjoying lately:

Oh, I almost forgot–happy Labor Day. Hopefully you’re enjoying a day off from your usual grind today, or at the very least, finding a little extra reprieve in the midst of still working, taking care of kids, or other real life things that might not stop for Federal holidays. Once my work is done, I’ll be indulging in one last episode of Making the Team, a flourless brownie with vanilla ice cream and fresh raspberries, and most likely a glass or two of wine.
Here are the details of what’s getting eaten at my house this week:
- Monday: THAT cheesy tart with romaine and lentil salad
- Tuesday: NYC to meet friends for dinner!
- Wednesday: Mom’s spinach and tomato portobello melts (testing before I post the recipe here!)
- Thursday: Quinoa and vegetable stew (from my new Cooking for Two issue from Cook’s Illustrated/America’s Test Kitchen)
- Friday: TBD–might be on the road for said wedding, in which case I’ll Insta what I end up packing for dinner in the car
